In any given year, approximately 48 million Americans experience some form of foodborne illness, according to the Centers for Disease Control and Prevention (CDC). While most people recover from bouts of foodborne illness, it's still responsive for about 3,000 deaths in the United States each year. To curb these numbers, restaurants and food service establishments are required by law to follow certain food safety and hygiene requirements.
Food safety generally consists of four key areas: cleaning, separating foods, refrigerating or freezing and cooking.

Cleaning, of course, refers to the act of sanitizing surfaces on which food is prepared as well as your own hands. Neglecting to clean only increases the risk of foodborne illness by allowing germs to spread. Separating foods, on the other hand, refers to keeping raw meats away from other foods. If you're cooking chicken on the grill, for example, don't allow it to touch nearby vegetables.
The third key area of food safety is refrigerating or freezing. After food has been cooked, especially meat, any remaining leftovers should be refrigerated or frozen promptly to reduce the risk of foodborne illness. Finally, cooking refers to the act of heating food to a safe temperature where it inhibits the growth of illness-causing germs.
Different meats have different safe cooking temperatures. Food safety guidelines show that chicken should be cooked to at least 165 degrees Fahrenheit, whereas pork should be cooked to at least 145 degrees Fahrenheit. If meat isn't cooked to the appropriate temperature, it may pave the way for bacteria and viruses, some of which could cause foodborne illness when the meat is consumed.
